Settimana intensa...poco tempo per qualsiasi cosa, e nonostante sia appena passato il giorno libero mi sento di vivere in una corsa ad ostacoli infinita....in più il mio portatile mi si disfa sotto le dita, e scrivere un post diventa una tragedia perchè la tastiera ha qualche problema di comprensione, quindi mi tocca martellare pesantemente sul tasto "spazio" per non avere un unico blocco di parole...insomma capitemi.....questo pane nasce come integrale e senza aggiunzioni di semi o di altro....io alla quantità di farina integrale ho sostituito un mix di farine e unito un pò di semini...che comunque rendono il pane scuro e ricco di sapori...
225g bianca
70 g farina di grano saraceno
30 g semola spezzata o farina per polenta
20 g farinadi castagne
20 g struttoo burro
5g olio evo
160g acqua
40g lievito madre
1og sale
10g livito di birra
1cucchiaio di semi di papavero,uno di semi di sesamo, uno di semi di girasole, uno di semi di lino
verso tutti gli ingredienti dentro la ciotola della planetaria ad eccezione del sale che lo aggiungo quando tutto è ben mescolato...impasto per circa 10minuti...metto il tutto dentro uno stampo imburrato da plumcake o dentro la cassetta e faccio lievitare sino al raddoppio...considerate che la presenza di farine deboli e del poco lievito di birra rallenta di molto la lievitazione, quindi passeranno circa2ore, il massimo è riuscire a far crescere l'impasto fin sopra il bordo della cassetta...infornare a180° per 35/40minuti...
